Jikko Blue #2 Steel Custom Handmade Japanese Knives
Jikko was established in 1901 in the Japanese city of Sakai located in the Osaka prefecture where many of Japan’s top quality knife makers can be found. Each blade is fashioned using San-Mai construction including a cutting core crafted from the highest grade Blue #2 Steel. Jikko knives are hand finished using the proprietary “Hatsuke” method to create the perfect blade angle and to give their knives an even balance of sharpness and edge retention. The full tang is enclosed within a beautiful ebony wood handle with a water buffalo horn bolster.
