Our All New Dragon Fire 9" Kiritsuke Chef's Knife. Made from American BD1N steel, heat treated to 63HRC for a long-lived edge. The handle is made from Red and Black linen Micarta, giving the Dragon Fire series its name. Handle pins and endcap are made from tough 410 stainless steel to resist corrosion and last a lifetime.
The Japanese inspired blade shape has a more shallow "belly" than traditional Western kitchen knives. The angular tip allows for more strength right at the tip, preferred in Japanese cooking when preparing proteins, particularly chicken or fish.
